Abstract

The results of studies on the development of optimal conditions for the release of inulinase from Jerusalem artichoke tubers (Helianthus tuberosus) are presented. The most effective extractant, which promotes the maximum transfer of proteins into solution, has been identified, and the extract of soluble protein has been concentrated with complete preservation of its enzymatic activity. Three inulinase isoenzymes with different degrees of purification have been isolated, hydrolyzing inulin with activity I1 = 0.0175 U / mg, I2 = 0.0083 U / mg, I3 = 0.00450 U / mg.
